For the focaccia, mix 2.2 lbs bread flour (type 1) with 3 cups water, 1 teaspoon active dry yeast, and add 2 1/2 teaspoons salt halfway through kneading. Let the dough rise for 24 hours.

One hour before baking, use 2 sheets of parchment paper brushed with oil. Stretch half of the dough by hand, add the cheese and ham, then cover with the other half of the dough and let it rise again. Before baking, brush the top with the emulsion.

Bake at 400°F (200°C) for 30 minutes: bake on the lowest oven rack for the first 15 minutes, then move to a higher rack to finish.
