Ingredients

1 serving
  1. 1chicken breast
  2. 1chicken portion (drumstick, wing, thigh, etc.)
  3. 2-3large floury potatoes
  4. As neededOil for deep frying
  5. 1large free-range egg (beaten)
  6. as neededto coat Panko
  7. ⚫
  8. ➖ Breading ➖
  9. 1/4 cupflour (or preferably fine breadcrumbs)
  10. 2 tablespoonpaprika
  11. 2 teaspoonssalt
  12. 1 teaspoonblack pepper
  13. 1 teaspoondried thyme
  14. 1/2 teaspoondried parsley
  15. 1/2 teaspoononion powder
  16. 1/2 teaspoongarlic powder

Steps

    Mix the breading throughly, except for the Panko

  2. 2

    Cut your potatoes into thick chips and deep fry at 130°C (265°F) for 2 minutes

    Preheat your oven to gas mark 5/190°C (375°F)

  4. 4

    Dip your chicken in to the egg, then completely dredge in the breading

    Dip in to the egg again, then coat with Panko

    Put on a baking tray and place in the middle of the oven for 35-40 minutes. Use a skewer to pierce, if the juices run clear, it's done. If they run pink, give it a further 5 minutes then test again. If using a meat thermometer, the temp. should be 75°C or 165°F

  7. 7

    Turn the oven off when the chicken is done, but leave in, and let rest in the residual heat for 10 minutes

    Bring your oil to 190°C or 375°F while your chicken rests. Deep fry your chips for another 2 minutes when ready to serve. Remove your chicken from the oven when rested, and deep fry for 1 minute until golden

  9. 9

    Serve on kitchen paper or a napkin in a basket or bowl with the chips and a salad

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.
