  1. 1 kgspinach, shredded
  2. 1 cupbrown lentils
  3. 1 medium potato, peeled and cut into small cubes
  4. 2 medium onions, chopped
  5. 5 clovesgarlic, chopped
  6. 1/2 cuplemon juice
  7. 3 tablespoonsvegetable oil
  8. 2 teaspoonssalt

    In a pot, boil the lentils with 6 to 7 cups of water over medium heat for about 40 min.

    Meanwhile, put the oil in a small pan over medium heat and fry the onion and garlic for 5 min or until they become golden in color.

    When the lentils are cooked, add the onion and garlic mixture, potato cubes, spinach, salt and 4 cups of water and stir.

    Cover the pot and leave on medium heat for 40 min or until the potato and spinach are well cooked. Add the lemon juice after removing from heat.

    Serve hot.

I love to cook even though i don't always have time to do it. I like inviting friends and cooking the complete menu from starters to dessert. This I try to do a few times a year.I am big on baking. I started baking at around 6... And I still enjoy it a lot. It is a major stress reliever and I love the smells that come out from the oven! Plus it is always kind of magical to witness a batter becoming a cake :) Favorite things to cook: banana muffins, fancy salads, brownies. All kind of pasta.
