Tortas Ahogadas with Chicken Tinga

Here are the bolillo rolls:

The chicken tinga, Rosy style:

The refried beans:

The pickled onions:

The ingredients for the sauce:

Wash the tomatoes, cut them, and cook them in 1 cup of water (240 ml).

Blend the garlic with a little water. Then add the cooked tomatoes, salt, and oregano. Blend well.

Pour the mixture back into the pot where you cooked the tomatoes. Heat it up. If you like, add a tablespoon of hot sauce.

Cut the ends off the bolillo rolls and slice them in half lengthwise.

Spread refried beans on the rolls:

Add the Rosy-style chicken tinga.

Top with pickled onions.

Place the sandwich on a serving plate and pour the hot sauce over it.
