A delicious northern-style breakfast. Serve with green salsa, refried beans, and fresh cheese.

Cut the tortillas into medium-sized pieces. You can also use tortilla chips (packaged, cut, and fried tortillas).

Add enough oil to a skillet and fry the tortilla pieces until golden. Lightly salt.

Beat the eggs and add salt to taste.

Pour the eggs over the tortillas in the skillet and stir vigorously.
- 5
Serve and add your favorite sides, salsa, and/or sour cream. Enjoy!
