It is a popular, quick and easy recipe of Rajasthani cuisine. It is a curry base subzi, mainly served with roti or bajra rotla. I hope you will like it.

Heat a tawa and roast all papad. Then keep it aside.

Then take a kadhai and add ghee. Now add mustard seeds, cumin seeds, dry red chilli, curry leaves and asafoetida.

Now add ginger garlic paste, turmeric, red chilli powder, coriander powder, cumin powder. Keep the flame slow.

Then add curd and keep stirring for 2 minutes. After ghee seperates, add salt, Garam masala and jaggery. Mix it well.

Add water to adjust consistency. Boil it for 2 minutes.

Now cut all papad into small pieces with your hand. Transfer it into curry. Sprinkle chopped coriander and serve it.

Dahi-papad ki subzi is ready. Enjoy it with roti or bajra rotla.
