Eatclean / Oatmeal Porridge with Ground Pork, Mushrooms & Soft-Boiled Egg

Can you believe this delicious bowl of porridge is actually part of my diet plan? Eating clean should make you happy and still taste great so you can stick with it long-term. This version uses oats instead of regular rice, which also cooks much faster—just boil for 5 minutes and the oats become soft and fluffy (I use rolled oats).
Here's a tip I learned from my personal trainer: If you want to keep broths or boiled meat water low in fat, after boiling chicken (or other meats), save the broth and chill it in the fridge. After a few hours, the fat will solidify on top. Just skim off the fat, reheat the broth, and use it for your favorite soups or porridges. The result is a clear, fat-free broth. (This works with beef and other meats too.)

Here are the ingredients for the porridge.

Sauté the shallot in a little olive oil until fragrant. Add the ground pork and cook until it firms up, then add the mushrooms. Season with 1 teaspoon fish sauce and a pinch of black pepper. Stir-fry until the mushrooms absorb the flavors.

Pour in the chicken broth (with fat removed) and bring to a boil with the whole egg and one whole mushroom. Once boiling, add the oats. Boil the egg for about 7 minutes, then remove it. Lower the heat and continue simmering the porridge until the oats are soft and fluffy.

Ladle the porridge into a bowl, top with the pork and mushroom mixture. Cut the egg in half and place on top. Sprinkle with chopped green onion and cilantro. So yum!
