Another hack using wonton skin. This one is healthy as it's baked not fried and with very simple ingredients.
Steps

Spray muffin tray with a bit of olive oil. Lay the wonton skin carefully on the muffin tray.

Diced tomatoes, cucumber and capsicum. Beat 1 egg in a bowl, add the chopped veggies, sprinkled a bit of salt. Carefully place them into the tray with spoon.

Bakes at 200 degrees for 10 minutes. Ready to snack on.
