Japanese Style Stir-Fry Noodles

Easy, and good. A little different.
These were the goals I had. This is a combination of a couple recipes. Probably closer to a Yakisoba dish since the sauce is a type of Yakisoba sauce, but i used some other technics also. I would say any kind of noodle/pasta could be used in this. Just don't cook it all the way initially since it will get some extra time in the sauce. I used chicken thighs here, but chicken breasts would work also.

Ingredients

2-4 servings
  1. Meat
  2. 2 pieceschicken, boneless, skinless
  3. 1 tablespoonsoy/fish/Worcestershire sauce
  4. 1 tablespooncorn starch
  5. 1hot sauce (optional) to taste
  6. Main
  7. 2 clovesgarlic
  8. 1 tablespoongrated fresh ginger
  9. 1/2onion
  10. 1Bell pepper
  11. 4-5large mushrooms
  12. 1 1/2 cupscabbage
  13. 1/4 cupbroth or water
  14. 1black pepper to taste
  15. Sauce
  16. 2 tablespoonsWorcestershire sauce
  17. 3 tablespoonscatsup (tomato)
  18. 1 tablespoonsoy sauce
  19. 2 tablespoonhoney or sugar
  20. 1garlic clove, mashed/puried
  21. 1 tablespoonhot sauce/chili sauce to taste (optional)

Steps

  1. 1

    Cut your chicken up into pieces. I'm using a small size here, just my choice

    Place chicken in a bowl, grind some pepper on it if you wish.

    If you choose to, add some hot sauce, mix it up, if not using hot sauce, skip this step

    Add corn starch and mix it in well, set aside

    If you have to cook your noodles, do that now. I'm using a fresh udon noodle this time that does not require pre-cooking. Cook and set aside if you need to.

    Cut your cabbage into small pieces, I'm using napa cabbage here, but any cabbage should work

    Cut your onion into smallish dice

    Cut your pepper in a small dice. I don't like Bell pepper, so I am using a Hungarian wax pepper instead, any mild pepper should work.

    Slice your mushrooms. I'm using crimini here, but button or shitaki would work

    Just put all your veggies aside, together, it will be fine

    Chop your garlic, grate your ginger.

    Heat a strir-fry/skillet/wok on medium high heat, with a couple tablespoons oil.

    About like this.

    Add your garlic and ginger to the hot oil, stir for 1 minute

    Now as the veggies and stir

    Add all the sauce ingredients together and stir well, TASTE your sauce, adjust honey if you want it sweeter, set aside

    Once the cabbage just starts to Wilt, add your chicken, now frequent stirring is required

    Once your chicken is about half cooked, add the broth, stir until the broth is gone.

    Once your chicken is just cooked, about the time the broth is gone, add your noodles, stir them to heat, about 1-2 minutes

    Turn your heat down to medium low. Stir your sauce, add it in, stir. Heat until it bubbles and its the thickness you like.

    Serve, garnish with sesame seeds, green onion, cilantro or parsley

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
