Paushtik (Healthy) Handvo
Steps

Take Handvo flour in a bowl. Add curds, cooking soda, oil & water to make a slightly thick batter. Cover & rest overnight for fermentation.

Next morning add grated bottle gourd (lauki), carrots & cabbage, all the spices & a little water. Mix jaggery - water mixture & add. Mix very well.

Tempering : Take oil in a pan, add mustard seeds.When mustard seeds splutter,add curry leaves & switch off the gas. Add sesame seeds. On adding they will also splutter.Now add 1/2 of this tempering on the batter. Mix.

Take a non-stick pan. Add the remaining tempering & start the flame of the gas. Add the batter. Level it. Cover & cook for 10 minutes or crispy & golden at the bottom.

Flip & cook the other side the same way but now only for 5 minutes. Remove from the pan & cool slightly. Cut into pieces & serve with sweet Gujarati pickle or tea / coffee.
