Ingredients

20 minutes
2-3 serves
  1. For Fermentation :
  2. 1 cupWedding Style Live Dhokla flour, made with urad dal, chana dal, yellow moong dal & rice
    Wedding Style Live Dhokla Pre-mix
  3. 1 tbspsour curds
  4. 1 tspoil
  5. 1 pinchcooking soda
  6. Water
  7. For the Handva Mixture :
  8. 3/4 cupgrated bottle gourd (lauki)
  9. 1/4 cupgrated carrot 🥕 & cabbage 🥬
  10. 1 tspgreen chilli - ginger paste
  11. 1 tspgaram masala
  12. 1/2 tspred chilli powder
  13. 1/2 tspturmeric powder
  14. 1 tbspjaggery mixed in 1/2 cup of water
  15. 1 tspsesame seeds
  16. For Tempering :
  17. 2 tbspoil
  18. 1 tspmustard seeds
  19. 1 tspsesame seeds
  20. 1dry red chilli
  21. A fewcurry leaves
  22. 1/2 tspasafoetida

Steps

20 minutes
  1. 1

    Take Handvo flour in a bowl. Add curds, cooking soda, oil & water to make a slightly thick batter. Cover & rest overnight for fermentation.

    Next morning add grated bottle gourd (lauki), carrots & cabbage, all the spices & a little water. Mix jaggery - water mixture & add. Mix very well.

    Tempering : Take oil in a pan, add mustard seeds.When mustard seeds splutter,add curry leaves & switch off the gas. Add sesame seeds. On adding they will also splutter.Now add 1/2 of this tempering on the batter. Mix.

    Take a non-stick pan. Add the remaining tempering & start the flame of the gas. Add the batter. Level it. Cover & cook for 10 minutes or crispy & golden at the bottom.

    Flip & cook the other side the same way but now only for 5 minutes. Remove from the pan & cool slightly. Cut into pieces & serve with sweet Gujarati pickle or tea / coffee.
