  1. 4large tomatoes
  2. 3large potatoes
  3. 1 large red onion
  4. Extra virgin olive oil, to taste
  5. Oregano, to taste
  6. Salt, to taste

    Peel and wash the potatoes, cut them into large cubes, and set aside for a moment.

  2. 2

    Bring a pot of water to a boil, add the potatoes, and cook for about 15 minutes.

  3. 3

    After this time, turn off the heat and drain the potatoes in a colander.

  4. 4

    Let the potatoes cool.

  5. 5

    Wash and clean the tomatoes, cut them into small cubes, and place them in a bowl.

  6. 6

    Peel and wash the onion, cut it in half, then slice it thinly and add it to the bowl with the tomatoes. Add the peppers, season with salt, oregano, and extra virgin olive oil, and mix everything well.

  7. 7

    Take a serving dish and arrange the salad of tomatoes, potatoes, and onion, then serve.
