Malai Kofta in Orange🟠 Gravy

For Orange🟠 Gravy: Soak the ingredients in milk for 2 hours. In oil add jira and khada masalas.

Add in sliced onions and saute for 3-4 minutes. Add in ginger-garlic. After 2 minutes add diced tomatoes.

Add in soaked ingredients and mix. Add indry masalas and salt

Cover and cook for 7-8 minutes. Cool completely.Meanwhile, roast chopped cashews and almonds in ghee. Switch off and mix in raisins. Allow to cool. Remove all the big khada masalas.

For Kofta: Ready all the ingredients Grate paneer and smoothen it. Grate boiled potatoes and mix everything for kofta's outer layer. Add required quantity of cornflour and form a smooth shapeable mixture.

For Kofta Stuffing: In some Kofta mixture add stuffing ingredients, mix and form small stuffing balls.

Now make stuffed koftas as shown. Use cornflour as required.

Make even surfaced koftas. Roll them lightly into cornflour and deep fry them on fast gas.

For Final Gravy.: Churn the cooled gravy ingredients to a smooth paste and strain it.

For Tempering Gravy: In butter and oil add Kashmiri chilli powder. Immediately add in the strained gravy paste. Cover and simmer for 4 minutes. Add in hot water as needed.

Add in salt, sugar and garam masala. Add in some churned malai and kasuri methi. Mix and switch off gas after few simmers.

For Final Serving: Place some gravy in serving dish. Place fried koftas. Pour gravy on koftas too.

Put some churned malai and some kasuri methi. Serve hot with Tandoori Roti
