A simple way to make chive dumplings.

Wash the Chinese chives, pat dry, and cut into 1/2-inch pieces. Set aside.

Stir-fry the chives in pork lard with crispy bits (or vegetable oil). Add salt (add more if you prefer it saltier). Cook until just wilted, then let cool.

Soak each rice paper wrapper in water until soft. Place the filling on the wrapper, roll it up, and serve with sweet soy dipping sauce and pickled chilies.
