Ingredients

  1. 2 cupsreadymade idli batter
  2. 1/4 cupgrated bottle gourd (doodhi / lauki)
  3. 1/4 cupfinely chopped spinach (palak)
  4. 2 tbspgrated onions
  5. 2 tbspgrated carrot
  6. 2 tbspfinely chopped coriander (dhania)
  7. 1 tspsugar
  8. 1 tspgreen chilli paste
  9. 1/2 tspgarlic (lehsun) paste
  10. 1/4 tspturmeric powder (haldi)
  11. 1/2 tspchilli powder
  12. to tastesalt
  13. 6 tspoil
  14. 1 1/2 tspmustard seeds (rai / sarson)
  15. 1 1/2 tspsesame seeds (til)
  16. 3 pinchesasafoetida (hing)
  17. For Serving
  18. Chutni

Steps

  1. 1

    Divide the handvo batter into 3 equal portions and keep aside.

  2. 2

    Heat 2 tsp of oil in a small non-stick pan, add ½ tsp of mustard seeds, ½ tsp of sesame seeds and a pinch of asafoetida and sauté on a medium flame for 30 seconds.

  3. 3

    Pour a portion of the prepared handvo batter and spread it evenly, cover with a lid and cook on a medium flame for 3 to 4 minutes or till it turns golden brown in colour.

  4. 4

    Turnover and again cover with a lid and cook on a medium flame for 3 to 4 minutes or till it turns golden brown in colour from the other side as well.

  5. 5

    Serve immediately with chutney
