Ingredients

8 servings
  1. 1 packBear Creek Gumbo Mix (sold at Farm & Fleet)
  2. 1smoked andouille sausage, cut in half length wise and then sliced
  3. 1/2 lbrotisserie chicken, shredded/cut into bite sized chunks
  4. 1 1/2 cupchopped carrot, oven roasted
  5. 1 1/4 cupchopped onion, oven roasted
  6. 1 cupchopped celery, oven roasted
  7. 1/2 cupred pepper, oven roasted
  8. 1/2 cupgreen pepper, oven roasted
  9. 14 1/2 ozcanned tomatoes, drained & oven roasted
  10. 10 ozfrozen cut okra, oven roasted
  11. 1Coarse ground pepper
  12. 1Olive oil
  13. 1Kosher salt

Steps

    Preheat oven to 425. Line half sheet pan(s) with foil. Roast veggies coated with olive oil, kosher salt and coarse ground pepper. Make sure veggies are in a single layer on the tray and roast until they start to brown. Roasting takes about 20-30 minutes per batch. Reline sheet pans with new foil for each batch.

    Prepare soup per directions on package. Add okra to soup while you are simmering. Then add remaining ingredients. When soup is done it will thicken a bit as it sits so is delicious made ahead of time.

    Good side option is Chi-Chi's Sweet Corn Cake Mix.
