Preheat oven to 425. Line half sheet pan(s) with foil. Roast veggies coated with olive oil, kosher salt and coarse ground pepper. Make sure veggies are in a single layer on the tray and roast until they start to brown. Roasting takes about 20-30 minutes per batch. Reline sheet pans with new foil for each batch.

Prepare soup per directions on package. Add okra to soup while you are simmering. Then add remaining ingredients. When soup is done it will thicken a bit as it sits so is delicious made ahead of time.
