Ingredients

  1. 1 lbRigatoni
  2. 1/4 cupExtra virgin olive oil
  3. 1/4 lbThick cut bacon sliced crosswise 1/4 inch thick
  4. 1Red Onion, halved and thinly sliced
  5. 1/4 cupTomato paste
  6. 2 tspcrushed red pepper
  7. 1 1/4 cupstrained tomatoes
  8. 1/2 cupPecorino ramano cheese
  9. 1/2 cupchopped parsley
  10. 1salt and pepper

Cooking Instructions

    In large saucepan, cook the pasta until al dente, reserving 1 cup of cooking water

    Meanwhile, in a large saucepan heat oil. Add bacon and onion. Cook over moderate high heat, stirring occasionally until onion is softened and bacon is browned, 5-7 minutes. Add tomato paste and red pepper, stirring for 1 minute. Stir in strained tomatoes and bring sauce to a simmer.

    Add pasta and reserved cooking water to sauce and cook over moderate heat, tossing until coated. Remove from heat and stir in half cup each cheese and parsley. Season with salt and pepper.
