Ingredients

  1. 2 cupsmixed chopped veggies
  2. Cauliflower florets
  3. French beans
  4. Carrots
  5. Green peas(matar)fresh or frozen
  6. Potatoes diced
  7. 1/4 cupsoya bean nuggets
  8. 1/2 cupmushrooms
  9. 1/2 cuppaneer
  10. 1 1/2 cupfresh coconut grated
  11. 1/2 cupcoriander leaves
  12. 3green chilles (can adjust according to ur taste)
  13. 10kaju
  14. 1 tbsppoppy seeds (khus khus)
  15. 2 tbspsesame seeds (til)
  16. 5garlic cloves
  17. 1 inchginger
  18. 1 tbspcoriander seeds (Dhaniya)
  19. 1/2 tbspfennel seeds (badisoap)
  20. 1 tspTurmeric
  21. 2green cardmom (ealichi)
  22. 2 piecescinnamon sticks(dalchini)
  23. 5 cloves(lavang)
  24. 3 tbsoil
  25. 2 tbspghee
  26. as neededVegetable stock or water
  27. leafBay leaf
  28. 1 cupchopped onion
  29. 1/2 cupchopped tomatoes
  30. To tasteSalt
  31. Handful coriander leaves for garnishing

Steps

  1. 1

    For masala paste : heat 1 tsp oil in pan add coriander seeds, fennel seeds, ginger, garlic,green chilles, sesame seeds, cardmom, cloves, cinnamon, fry this for 5 mins then switch off the flame add coconut and coriander leaves,turmeric, add water as required and make fine paste

    Soak poppy seeds and kaju in water for 20 mins & make paste of this

  3. 3

    Boil all the veggies with little salt

  4. 4

    Soak soya bean in water for 10 mins, squeeze water and keep aside

  5. 5

    Heat oil & ghee in wok add bay leaf next add chopped onion fry it till translucent then add tomatoes fry till oil seprates next add masala paste fry well,then add kaju, khus khus paste & boil it for 5 mins

  6. 6

    Next add boiled veggies, vegetable stock, salt, add soya bean stir & give it a nice boil thn add paneer & mushroom

  7. 7

    Cover and cook for 7- 10 mins switch off the flame

    Garnish with coriander leaves and fried kaju

    Note : In this recipe i have used green chilles, though u can also add red chilles

    If vegetable kurma gravy looks thick add some more water the consistency should be medium neither thick nor thin.
