Ingredients

  • 12-14Shrimp
  • 2small Zucchini chopped bite size
  • 2cupBaby spinach
  • 1 tbspvegetable oil
  • 1 1/2cupdashi broth
  • 4 clovesgarlic,mince
  • 1tumb size ginger peeled and cut into thin strips
  • 1small onion finely sliced
  • 1large potato peel and cut bite size
  • 3 tbspsoy sauce
  • 1/2 tbspsugar
  • 1 tbspmirin
  • 1 tbspsake
  • 2 tbsppotato starch or corn starch mix with cold water
  • White pepper optional

Steps

  1. 1

    In large deep skillet over medium high heat add oil,garlic,ginger, and cook 1 minute until become fragnant

  2. 2

    Add onion and cook for about 3 minute

  3. 3

    Add potatoes and cook for 4 minutes, stirring often to prevent ingredients from burning

  4. 4

    Add zucchini and shrimp and cook for 3 minutes, stirring often

  5. 5

    Add spinach,dashi broth,soy sauce,sugar,sake,Mirin and cook for about 3 to 4 minutes until the potatoes are tender

  6. 6

    Add mixture of potato starch with water and stir well until the sauce thickens

  7. 7

    Turn off the heat and serve on top of rice with white pepper.enjoy it
