Dana Muthiya nu shaak is prepared during winters. It is a typical Gujarati dish which is prepared with surti kala vaal ni papdi and methi muthiya. This sabji is delicious and full of flavours as all the fresh green ingredients are used to prepare this dish. This dish can be served with puri, roti, paratha or rice.

Ingredients

  1. 500 gmssurti papdi dana or seeds
  2. 1/4 cupoil
  3. 1/2 teaspooncarom seeds
  4. 1/4 teaspoonhing /asafoetida
  5. 2dry red chillies
  6. 1/2 teaspoonturmeric powder
  7. 1 teaspoonsalt
  8. For muthiya -
  9. 3/4 cupwheat flour
  10. 3/4 cupgram flour
  11. 3 teaspoonsemolina
  12. 1 teaspoonoil
  13. 1/4 teaspoonbaking soda
  14. 1 tbspsugar
  15. 1 teaspoonginger paste
  16. 1 teaspoongreen chilli paste
  17. 1 cupchopped fenugreek leaves
  18. 2 teaspoonchopped coriander leaves
  19. 2 teaspoonchopped fresh garlic leaves
  20. 1/2 teaspoongaram masala
  21. 1/4 teaspoonhing /asafoetida
  22. 1/4 teaspooncarom seeds
  23. to taste Salt
  24. Green paste -
  25. 1/4 cupblanched and chopped spinach
  26. 1/4 cupfresh chopped coriander leaves
  27. 1/4 cupchopped green garlic
  28. 1 teaspoonginger paste
  29. 2green chillies
  30. 2 tbspdesiccated coconut or fresh coconut
  31. 2 tbspsesame seeds
  32. Other ingredients -
  33. 2 tbspoil
  34. 1/4 teaspoonhing /asafoetida
  35. 1 teaspooncoriander cumin powder
  36. 1 teaspoonsugar
  37. 1 teaspoongaram masala
  38. to taste Salt
  39. 1 teaspooncoriander leaves to garnish
  40. 1 teaspoongreen garlic to garnish

Cooking Instructions

    Heat oil in a pressure cooker and add dry red chillies, carom seeds and hing. Add papdi dana to it along with salt and turmeric powder. Give it a good stir and cook it for 2 minutes on medium heat. Now add one cup of water and cook it until one whistle. Let it cool down itself.

    To prepare muthiya, in a big bowl, add wheat flour, gram flour and semolina along with all the spices. Mix everything well and add fenugreek leaves, coriander leaves and fresh green garlic. Mix it well and add 1 tbsp water at a time to make muthiya dough. Do not add lot of water at once. If fenugreek leaves are washed and added to the flours then you might not need to add more water.

    Now divide the dough into 25 small balls. Steam muthiya for 12 to 15 minutes or until done. You can even fry them instead of steaming. Both taste equally good.

    To prepare green paste, add everything in a mixer jar and make a paste. You can add little water to grind it.

    Now heat oil in a pot and add carom seeds and hing to it. Now add prepared green paste to it and saute it for 2 to 3 minutes on medium heat. Add cooked papdi dana along with water and mix everything well. Add another 2 cups of water and cook it on medium heat for 5 minutes. Now add salt, sugar, coriander cumin powder and garam masala to it and mix it well.

    Add prepared muthiya to the pot and cook it for 5 to 7 minutes on medium heat. You can adjust the amount of water according to your choice. When it is done, garnish it with fresh coriander leaves and green garlic.

    Serve dana muthiya nu shake with puri, roti, paratha or rice.
