My Leek+Potato Soup

Love this soup I used every bit of the potato and skin so all the goodness is in there. Also made enough so I can freeze some and have it on these cold days. You dont need to thicken it the potatoes do that for you. You can add Cream if you want it. 💙 #Starter #Lunch #SeasonalCooking #Cookeverypart

Ingredients

6 servings
  1. 1 knobbutter
  2. 1/4of a medium yellow onion diced
  3. 12medium potatoes washed leave skin on and cut in half
  4. 3long lengths Leeks wash and cut into circles
  5. 1dried veg cube sprinkled in
  6. 1 tspGarlic granuals
  7. Season with Sea salt + Black pepper

    Add knob of Butter to the saucepan melt it then add the onions fry until opaque in colour.

    Next add the potatoes and 2 pints of Boiling water stir in.

  5. 5

    Next add the chopped Leek

  6. 6

    Then add the stock cube, garlic and stir in.

  7. 7

    Lastly add the sea salt and black pepper when its boiling turn to lowest heat and let it simmer for 35 minutes. When its cooked I run it through a blender so its smooth then add back on the heat bring back to the boil.

    Its ready to serve into a soup bowl and add some chopped spring onion for the finish Enjoy!

It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
