My take on Nasi koreng that me and Sonia cooked live on Facebook for our recipe of the week this morning. We cooked this delicious dish using Kezia’s Nasi goreng (fried rice) recipe but adapted to use some store cupboard and seasonal vegetable. The leftover rice is perfect for this recipe as well as you need cold rice to do stir fried. It was absolutely delicious!!

Ingredients

20 minutes
2 people
  1. 1 cupcold rice (ideal for leftover rice)
  2. 1leek, or 2 spring onions (take the hard skin off and finely chopped)
  3. 1 cupmixed frozen vegetable (or can use frozen peas)
  4. 1 tbspfishsauce (soysauce for began version)
  5. 2 tbspkicap manis (or sweet soy sauce)
  6. Some vegetable cooking oil
  7. 2eggs (optional)
  8. Salt and pepper to taste
  9. Spices paste
  10. 2shallots, peeled and chopped
  11. 3 clovegarlic, peeled and chopped
  12. 1 tspground white pepper
  13. 1-2red bird eye chilli, chopped
  14. 1 tbspshrimp paste (optional) (can use miso paste for vegan option)
  15. Side garnish
  16. Cucumber
  17. Tomato
  18. Crispy shallots
  19. Sambal

Cooking Instructions

    Pound your spices together in the pastel and mortar until it becomes paste. Leave it aside.

    Add some vegetable cooking oil in a wok or pan (medium high heat), add your paste in and stir well for 2-3 min until your paste smell lovely and fragrant.
    Add leeks and frozen vegetables in, mix well and add rice in then stir and mix them up nicely.

    Add some fishsauce, kicap manis Mix them well again. Seasoning with salt and pepper and turn the heat off.

    In another small saucepan or pan, add about 2-3 tbsp vegetable cooking oil, wait until the oil hot, add an egg at a time, fry until the edge become crispy for 1-2 min. It’s really personal preference how well done you would like your egg yolk to be.

    Plate up, serve your rice, add egg on top. Serve with freshly sliced cucumber, tomato and sambal on the side for an dxtra kick
