Vada known as medu vada made from whole white urad. Serve with hot sambhar and coconut chutney.
Cooking Instructions

Wash whole white urad in water for 4-5 times. Soak in clean water overnight or for 6 hours.

Discard soaked water. Grind soaked urad in wet grinder with little water(if required) to make smooth batter.

Transfer it in mixing bowl. Beat this grinded urad batter with hand for 5 minutes to make fluffy mixture. Add salt, finely chopped green chillies and cummin seeds in it.

Heat oil for frying. Take big tea strainer. On back side apply water. Take ball size prepared urad mixture. Place on this tea strainer. Give round shape with wet finger. Make hole in center. Drop in hot oil. Similarly prepare more. (3-4 at a time). Deep fry in hot oil on medium flame till crispy golden brown. Similarly prepare all vadas

For making sambhar.. wash toor dal and pressure cook with 1 glass of water for 4 whistles. Cool and whisk it. Keep aside.

Make tomato puree and keep aside. Grind coconut and sambhar powder to make paste. Keep aside. Chopped shallots finely.(You can add veggies like drumsticks, pumpkin)

In cooking pan add tomato puree,whisked toor dal, coconut sambhar powder paste. Add salt, aamchur powder and mix well. Add1 glass of water.Boil/ simmer for 5 minutes.

In small tadka pan add heat oil. Add urad dal saute it till pinkish. Add mustard seeds as splutter add dry red chillies and curry leaves. Off the flame. Pour this tempering on boiling sambhar. Mix well. Off the flame. Serve hot.

To make coconut chutney..add green chillies ginger pieces,roasted gram, chopped coconut pieces, salt in mixer jar. Churn/ blend it for 1 minute. Add cold milk and again churn to make chutney.

At the time of serving.. place hot urad vadas in serving plate. Pour 2-3 ladle ful of prepared hot sambhar. Serve/ relish delicious South Indian savoury hot Sambhar Vada with coconut chutney.
