Ingredients

  1. 2 Cupsall-purpose Flour
  2. 1/2 (1 Cup)granulated Sugar
  3. 1/2 tspSalt
  4. 1+1/2 Tsp Baking Powder
  5. 1 Cupfresh Blueberries plus extra for top of muffins
  6. Zest of 1 lemon
  7. 1 CupMilk
  8. 1Egg
  9. 1/2 TspVanilla extract
  10. 4 TblsVegetable oil
  11. 3Squares of white chocolate broken into little lumps

Cooking Instructions

    Mix the Flour, sugar, salt and Baking powder together in a mixing bowl and using a whisk stir together

    In a jug add the milk, Egg, Vanilla, zest of a lemon and veg oil using a fork whisk together

    Preheat the oven 190°C. Add the blueberries and lemon zest into the flower mix.

    Pour the liquid in to the flour mix using a wooden spoon stir in until there are no more flour powder at the bottom. Stirring carefully not to burst open the blueberries

    Using parchment paper cut out enough squares to fit in the Muffin tray this mix makes 12. Line each one with the parchment paper then using a spoon add the mix to each one equally.

    Break some white chocolate into chips and add on top of 6 muffins just about 3 or 4 bits. Add 2 more blueberries to the other 6.

    Add to the oven for 20 minutes until the tops are a golden brown colour and test with a toothpick if cooked right through. Bring out let cool and enjoy.
