Ingredients

  1. 1.5 cupboiled rice
  2. 1.5 Tbspfresh lemon juice
  3. 1.5 Tspgrated ginger
  4. 1/3 Tspturmeric powder
  5. as per taste Salt
  6. 1.5 Tbspraw peanuts
  7. 5raw cashews
  8. 6-8curry leaves
  9. 1/2 Tspmustard seeds
  10. 1 Tspchana daal
  11. 1 Tspurad daal
  12. 2dry red chillies
  13. 2green chillies slit
  14. 1 pinchhing
  15. 1 Tbspghee/butter

Cooking Instructions

    Heat ghee/butter/oil in a wok. Roast raw peanuts and cashews first and set aside.

    To the rest of the fat add mustard seeds and let them crackle. Further, add dry chillies and both the daals.

    Then drop curry leaves and saute for half a minute.

  4. 4

    Now add hing, green chillies and grated ginger. Saute for a minute. Now add curry leaves and roast till they are aromatic.

    Further add salt and turmeric powder. Fry for some seconds and mix the lemon juice on low flame.

    Add the cooked rice and mix well. Garnish with roasted peanuts and Cashews and serve the delicious lemon rice.
