Tandoori Missi Roti

Missi roti is popular amongst Punjabi and Rajasthani people. It is prepared using wheat flour and gram flour, though ratios of both flours defer from person to person. Different spices are added to it which makes it really delicious. It can be served for breakfast along with tea, coffee, pickle, chutney or curd. It can be even served for lunch or dinner along with different curries.

Cooking Instructions

Mix together wheat flour and gram flour. Now add onion, yoghurt, oil, carom seeds, dry coriander seeds, hing, turmeric, red chilli powder, ginger paste, green chilli paste, kasuri methi, coriander leaves and salt to it and make a medium consistency dough. Add some oil and knead it for some time. Cover and rest it for 15 minutes.

Now divide the dough into 6 to 8 equal portions. Take one portion and dust it with some dry flour. Now roll it into a medium thick circle. Put some coriander leaves, green garlic and kalonji on top and press it lightly with the rolling pin.

Now apply some water on the back side of the roti and put it on the hot pan and press it lightly. Roast it for a minute on medium heat. Now turn the pan upside down and roast the roti on the flame directly. When some brown specs appear, remove it from the pan and apply some ghee. Prepare all the rotis in the same way. If you do not want to make tandoori roti then you do not have to turn the pan upside down, you can roast it straight on the pan.
