So I was wondering what if I can have cheesecake any time I want without turning on my oven and having to lock my fridge to prevent the entire cheesecake to disappear within a day. Well, if you can relate, I've got the perfect solution for you!! No more worries of portion controlling!

So I was wondering what if I can have cheesecake any time I want without turning on my oven and having to lock my fridge to prevent the entire cheesecake to disappear within a day. Well, if you can relate, I've got the perfect solution for you!! No more worries of portion controlling!

Ingredients

5 minutes
  1. 2 ouncesroom temperature cream cheese
  2. 1/2yogurt (nonfat, Greek... any)
  3. 1egg white
  4. 2 tablespoonssugar
  5. 1/4 tspvanilla extract
  6. 1/2 tsplemon juice (optional)
  7. Cookie crumbs(Oreo, graham crackers...) for crust
  8. 2 tablespoonsFruit jam (strawberry, peach, grape...)

Cooking Instructions

    Soften the cream cheese for a few hours at room temp or use the microwave

  2. 2

    In a medium bowl, cream the cream cheese and yogurt together with the sugar until sugar dissolves

  3. 3

    Add in the egg, lemon juice, and vanilla and mix until silky smooth

  4. 4

    In two wide mugs, line bottom with cookie crumbs for a crust and divide the batter among them evenly

    Shake and tap to level the tops and swirl in each 1 tablespoon of fruit jam

  6. 6

    Microwave each in 15 second intervals checking after each interval until cheesecake is no longer wobbly on the sides but only juggles a bit in the center and mall bubbles rose to the top.(takes around 1 minute or so in a 1200 watt oven, time depends on shape of mug and the power of your microwave)

    Let chill to room temperature and refrigerate for 2 hours until it is completely cold

    Serve with whipped cream, fresh berries, or a berry compote

  9. 9
