Black pepper is a popular seasoning for Chinese dishes, and you can find the black pepper beef stir fry on the typical Chinese restaurant menu. For this recipe, I chose chicken breast for the protein, added some crunch from the celery, and red bell pepper for color :-)

材料

2-3 servings
  1. boneless/skinless chx breast 1 (~1/2 lb)
  2. water 1 tablespoon
  3. sake 1 tablespoon
  4. soy sauce 1 teaspoon
  5. potato starch 1 teaspoon
  6. celery (cut into 1/4" bias) 2-3 stalks
  7. red bell pepper 1/2 medium (2" long julienned)
  8. shallot (thinly sliced) 1 medium
  9. ginger (julienned) 5 g
  10. canola oil 2 tablespoons (devided)
  11. mirin 1 tablespoon
  12. chicken bouillon powder 1/2-1 teaspoon
  13. kosher salt 1/4 teaspoons
  14. freshly ground black pepper 1/2 teaspoon
  15. toasted sesame oil 1 teaspoon

作り方

    Slice the chicken into 1/4" slices, then cut into strips.

    Marinade the chicken with water/sake/soy/starch in a bowl.

    Oil in a large skillet over medium heat.

  4. 4

    Add the chicken and cook until it's just cooked. Set aside.

  5. 5

    Add the rest of the oil/ginger and cook until it's fragrant.

  6. 6

    Add celery/pepper/shallots and cook for 1-2 minutes.

    Add chx/mirin/bouillon/salt/pepper/oil and toss to combine.

    Taste, adjust with salt as needed, and serve.

コツ・ポイント

Use Chinese technique call "velveting", which is marinating the meat in a mixture of starch to keep it moist and tender.
