Mini Rye Flour Soda Bread with Molasses

I love soda bread and I came up with this version because I wanted some healthy but with a little sweetness, yet doesn't take a long time to bake. The yogurt makes this bread very moist and the molasses gives it that unique rich, dark molasses flavor! Substitute honey for something lighter or to change up the taste.
Cooking Instructions
- 1
Preheat oven to 190C/375F. In a large bowl, mix together flour, oats, baking powder, salt, and any seeds/mix-ins you might be using.
- 2
In a separate bowl, mix together yogurt, molasses/honey, and oil.
- 3
Pour the yogurt mixture into the flour mix. Mix well to form the dough.
- 4
The dough will be rather moist and sticky, but it should be firm enough so you can shape it into a ball. It'll be okay after baking ;)
- 5
Dust your hands and the dough with a little extra flour (to help keep it from sticking to your hands) and shape into a roll. Cut a deep X into the roll with a knife.
- 6
Bake at 190C/375F for 20-25 minutes.
- 7
The molasses sweetness is so pleasant, you can enjoy it by itself or with just butter, but of course jam or even cheese is great too!

Fig Soda Bread Fig Soda Bread
I found this soda bread recipe when I wanted to make bread but was feeling too lazy to let the dough rise.Since I love figs, I used semi-dried figs this time, but nuts or any other dried fruits should taste good also. When you add the milk and yogurt, add about 30 ml each time and check the consistency, instead of adding it all at once. If the dough seems too wet, dust it with some flour to hold it together. Cold bread will be tasty again if you reheat it in the microwave. Recipe by ayaico cookpad.japan -

Redcurrant Soda Bread Redcurrant Soda Bread
I tried making this with redcurrants instead of figs.Don't add the milk and yoghurt all at once. Leave about 30 ml and keep an eye on it as you add a little at a time. If the dough is wet, dust it with flour and bring it together. Once it has cooled down, it's tasty if you heat it up again in the microwave for a few seconds. Recipe by ayaico cookpad.japan -

Irish Brown Bread (Whole Wheat Soda Bread) Irish Brown Bread (Whole Wheat Soda Bread)
My favorite soda bread recipe so far! Hearty bread in just 30 minutes. Whole wheat and bran makes it heartier and a lot more flavorful than white soda breads. It's so good with butter! I like to add in caraway, and sometimes other mix-ins like sunflower seeds and oats. If for some reason you can't get buttermilk, use a half milk/half yogurt mix instead. This recipe makes one small, manageable loaf. Felice -

Whole Wheat Flour & Adzuki Sakekasu Soda Bread Whole Wheat Flour & Adzuki Sakekasu Soda Bread
I wanted to use up my sakekasu; I tried adding it to the dough for soda bread I always make, and it came out delicious.I prefer sakekasu with a gentle flavor over yogurt in soda bread.Adjust the oven baking time accordingly.Since this bread is to accompany meals, it uses non-sweetened adzuki beans. It has it's own simple deliciousness, but it's also delicious when eaten with cream cheese. You can also use dry fruit and nuts in place of the adzuki beans. It's also good plain with nothing added to the dough.
