Ingredients

  1. 1 mediumonion, chopped
  2. 1 tbspolive oil
  3. 2 clovegarlic, minced
  4. 1 lbboneless skinless chicken breasts, chopped
  5. 32 ozchicken broth
  6. 1(6 ounce) can chopped green chiles
  7. 2 tspground cumin
  8. 2 tspdried oregano
  9. 1 1/2 tspcayenne pepper
  10. 3(14 1/2 ounce) cans great northern beans,drained,divided
  11. 1 cupshredded, monterey jack cheese
  12. 1chopped jalapeno pepper, optional

Cooking Instructions

    In a large saucepan, over medium heat, cook onion in oil for 10 minutes or until tender. Add garlic; cook 1 minute longer. Add the chicken, chicken broth, green chilies,cumin,oregano,and cayenne pepper; bring to a boil.

    Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer for 20-30 minutes or until heated thoroughly.

    Top with cheese and jalapeno pepper if desired.
