I always loved a good fruity topping for all of my savory dishes. I was in the grocery store one day and saw a bottle of pineapple salsa. My eldest daughter insisted that we buy it, so I gave in. It was quite nice on top of a quesadilla, but I thought "I could do better than this" and alas this recipe was thought up. I served it on top of grilled chicken BV (before vegetarian) but I can argue it tastes very good on "tacos" and even grilled tofu. I hope you enjoy! Lizzie Wilson -
