Beef & Cheese Chimichangas

Ingredients

  1. 1(BEEF CHIMICHANGA)
  2. 1 tbspOil
  3. 500 gramsLean ground beef
  4. 495 gramsBurrito kit
  5. 3 stickSpring onion, sliced
  6. 1/4 cupSlivered almonds
  7. 1 cupGrated cheddar cheese
  8. 1/4 cupSlivered almond (extra), toasted
  9. 1 stickSpring onion (extra), sliced

Cooking Instructions

    Preheat oven to 180*C.

  2. 2

    Heat oil in a large non stick fry pan, add mince and cook well until well browned.

    Stir in burrito seasoning mix, 1/4 cup water, shallots and 1/4 cup almonds. Simmer for 3 minutes. Cool, then fold through cheese.

    Open burrito tortilla pack, throw away freshness sachet.

  5. 5

    Microwave tortillas in pouch on high for 30 seconds to make tortillas more flexible. Spoon 1/3 cup mince mixture into centre of tortilla. Moisten edges slightly, fold all ends in like a parcel and turn over.

    Brush Chimichangas with oil and place on baking tray lined with baking paper. Bake for 15/20 mins or until golden brown. Serve topped with salsa and extra shallots and toasted almonds.
