Ingredients

  1. 250 gmButter/margarine
  2. 180 gmssugar
  3. 40 gmscocoa
  4. 250 gmsflour
  5. 1 tspbaking powder
  6. 1/2 tspbaking soda
  7. 2 tspvanilla essence
  8. 4eggs
  9. 1 cupcoconut milk
  10. 50 gmsdessicated coconut
  11. 100 gmsgrated chocolate
  12. Icing sugar for dusting

Cooking Instructions

    Measure out all your ingredients accurately.

    Prepare an 8" baking tin and preheat your oven to 180degrees.

    Thoroughly mix flour, baking powder, baking soda and cocoa and keep aside.

    In another bowl, put sugar and butter and cream till fluffy and pale.

    Add the eggs, one at a time and continue beating till well incorporated.

    Add the flour/coco/baking/powder/baking soda and continue mixing while adding the coconut milk.

    Fold in the desiccated coconut and put the batter into a baking tin. Bake at 180degrees for 40mins - 50 mins or until a skewer inserted comes out clean.

    Once the cake is baked, leave in the tin to cool for 10mins, then place on a cooling rack. Allow yo cool completely before icing.

    I wanted my cake 'semi naked' i placed the cake upside down on a cake board and cut the cake into half.

    Take the grated chocolate and melt it. Apply some whipped cream on the bottom layer of the cake and sprinkle some grated chocolate.

    Place the other layer back on the cake. Then pour out the melted chocolate on the cake and spread evenly allowing the chocolate to drip to the sides of the cake.

    Put your cake in the fridge for afew minutes.

    Cut out strips of parchment paper and place them in a design on your cake. I used some whipped cream to fix them at the edges.

    Put your icing sugar in a sieve and sift evenly on your cake.

    Make sure the.icing sugar is well distributed on your cake.

    Very carefully and gently lift the strips of parchment paper from the cake. Wipe off the excess icing sugar from the board. Serve and enjoy the cake!
