Cooking Instructions

Wash 8-10 spinach leaves and grind in mixer jar to smooth paste..keep aside. In mixing bowl add coarse urad flour,add spinach paste,cumin seeds and salt..add enough water to make medu vada batter.. seeing no lumps are formed. Keep cover for 1/2 hour. At time of making again(if needed add more water) mix well with hand for 10-15 mins...so batter will be fluffy.

Heat oil, take lemon size mixture from batter on fingers, make hole in centre with thumb to give shape of medu vada and drop it hot oil.. similarly make 4-5 and deep fry on medium flame till crispy and golden brown.

Or take small portion of prepared batter (to make round wada)and drop them one by one in hot oil..as shown.

Fry on medium flame till crispy and golden brown.

In mixer jar,add all ingredients for making green coconut chutney.. grind to smooth paste with little cold milk.

Serve /relish hot Spinach Medu vada savoury with green coconut chutney and tomato ketchup.
