Ingredients

  1. For Rajgiri puri
  2. 1 cupRajgiri flour
  3. 2boiled peeled grated potatoes
  4. 1 pinchsalt
  5. 1 pinchBlack pepper powder
  6. Water to knead the dough
  7. Oil for frying
  8. For loki tamatar ki sabji
  9. 1 bottleguard
  10. 2tomato
  11. to tastesendha namak Salt
  12. 1 teaspoonRed kashmiri chilli powder
  13. 1 tspcoriander powder
  14. 1 tbspcoriander chopped
  15. 2 tablespoonoil
  16. For sabudana kheer
  17. 250 mlmilk
  18. 1/2 cupsoaked drained sabudana
  19. Dry nuts
  20. Pistachios sliced
  21. Almonds sliced
  22. Cashewnuts sliced
  23. Raisins green
  24. 3/4 cupsugar or as per sweetness
  25. For cucumber raita
  26. 1 cupcurd not sour
  27. 1/2cucumber peeled and finally chopped
  28. 1 teaspooncumin powder
  29. to tasteSalt
  30. For sabudana tikki
  31. 1 cupsabudana washed and soaked
  32. 2potatoes boiled peeled and grated
  33. 1 tspblack pepper powder
  34. Oil for shallow frying
  35. to tasteSalt
  36. Fresh coriander chopped
  37. 1 tbsproasted crushed peanuts
  38. For potatoes tikki
  39. 2boiled peeled grated potatoes
  40. Sendha namak as per taste
  41. Green chilli chopped
  42. 1 tbspfasting corn flour..I got it in Indian store
  43. Coriander chopped
  44. For lassi
  45. 1 cupmild curd
  46. 1 cupwater
  47. 1 tspCumin powder
  48. Salt to taste I used sendha namak
  49. For veggies samo rice
  50. 1/2 cupsamo rice washed and soaked fir 1/2an hour
  51. Veggies I used
  52. 1carrot peeled and chopped in cubes
  53. 1/2 bottleguard peeled and chopped
  54. 2potatoes peeled and chopped
  55. 1big Tomato chopped
  56. 1 bunchcoriander clean wash and chopped
  57. to tasteSalt
  58. 2 tspRed kashmiri chilli powder
  59. 1 tspblack pepper powder
  60. 1 tspturmeric powder optional
  61. 2 tbspoil

Cooking Instructions

    For sabudana kheer

    In a heavy bottom pan add milk let it boil add all nuts and sugar

  3. 3

    Add kesar add sabudana boil it again till all sugar dissolve..

    It took 5-10 minutes to get thick..but keep stirring else it will stick to pan

    Switch off the flame let it cool keep it in fridge to chill

    For loki tamatar ki s

    First peeled bottle guard and chopped it in cubes

    Chopped tomatoes

    Heat oil in cooker add mustard seeds when it crackling

  10. 10

    Add chopped bottle guard add tomatoes salt chilli powder coriander powder and fresh coriander

    Cover the cooker give two whistles slow the flame 1 more whistle on slow flame switch off the gas..tour loki tamatar ki sabji ready

    Sabudana tikki

    In a bowl add Sabudana grated Potatoes black pepper powder crushed peanuts and chopped coriander sendha namak and make petty or tikki out of it

    Heat a nonstick tawa add little oil when it hot enough put sabudana tikki and fry it till golden brown in color from both sides..serve hot..

    Rajgiri puri

    In a bowl add Rajgiri flour salt black pepper powder grated potatoes add water slowly as needed to knead the dough..

    Heat oil.. divide the dough in equal balls..roll puri balls with rolling pin and fry it on medium flame till brown in color from both..your Rajgiri puri are ready

    For cucumber raita add curd chopped coriander chopped cucumber salt black pepper powder and cumin powder mix well.keep it in fridge to chill.. cucumber raita is ready

    For lassi

    Add water curd cumin powder salt and chopped mint together blend it

    Add crushed ice and serve chilled

    For veggies samo rice

    In a pan add oil when it is hot enough

    Add cumin seeds mustard seeds

    Add veggies of your choice I added chopped potatoes bottle guard carrot and mix well add spices like chilli powder sendha namak turmeric powder black pepper powder and mix well.

    Add water as needed when it cooked and veggies become tender add tomato and chopped coriander.. adjust spices as per your taste.. tadaaaa your veggies samo rice ready..
