I was craving for something that has coconut flavor in the middle of the night. I had only the four ingredients in my apartment, so I decided to try baking this coconut cookies using rice flour instead of the all-purpose flour to see the difference. The cookies turned out awesome. It has rich flavor. If you don't want it to be mushy in the middle, you can reduce the amount of margarine to only half of 1/4 cup. Also, 2 tablespoons of powdered would be just fine, too. Try it! It's really yummy. It goes well with a cup of coffee or green tea. I originally made these cookies with kinako, but lately I have been making them with barley flour instead.Caution: The ingredients are adjusted to suit barley flour.
