I ate lasagna for the first time over 14 years ago and I loved it. I couldn't wait to try it out myself.
In Kenya, try out Quickmart Supermarket or a big Naivas Supermarket for ingredients such as the lasagna noodles and cheese, otherwise, everything else is locally available.

Cooking Instructions

In a cooking pot on medium heat, fry the onion in cooking oil until translucent.
Add in the garlic paste and stir for 2 minutes.
Add in the ground meat as well as all the other ingredients for the meat sauce.
Add in 2 cups of water, stir to mix and let it simmer, while covered, on medium low heat for about 45 - 60 minutes.
When the oil floats to the top, this will indicate the meat sauce is ready.
It should not be too runny. - 2
As the meat sauce cooks, prepare the béchamel sauce.
On medium low heat, melt the butter in a pan, then add in the wheat flour as you gently but continuously stir. Once the flour is dissolved in the oil, add in the warm milk while stirring continuously until the sauce thickens. Add salt and nutmeg. Then it's ready.

The layering process.
At the bottom of the dish you are using, smear some oil followed by the diced tomatoes to precent the food from sticking to the bottom.
Place the first layer of lasagna noodles covering all corners. Follow with a layer of the meat sauce poured on top. Next, layer with grated cheese (Mixing both mozzarella and cheddar) and coriander. Lastly pour a thin layer of bechamel sauce.
Add another layer of noodles and repeat the process until the top of the casserole dish. - 4
The layers will look as so, leave some space at the top so that the lasagna doesn't overflow as it cooks.
Cover the top of the dish with foil paper And bake in the oven for 1 hour at 190 degrees Celsius. - 5
Once the time is done, take it out of the oven and let it cool for about 30 minutes before cutting it and eating. Cooling ensures it stiffens up a bit.
