Fresh corn season is always the right season for corn pudding. I love the taste of corn moin moin and the longer it stays, the more delicious it taste. So here my quick, easy breezy method of making this super yum recipe. 😋🥂🍾

Ingredients

  1. 3 cupfresh corn removed from cob
  2. 4hot chilli pepper
  3. 4fresh scent leaves
  4. 1medium size onion
  5. 3 tablespoonground crayfish
  6. 2 tablespoonchicken fat from chicken stock
  7. Smoked fish flakes or shredded
  8. 1stock cube
  9. to tasteSelf
  10. Metallic cups for steaming

    Combine all the ingredients, blend till smooth paste forms., pour into a mixing bowl...

    Add chicken fat, ground crayfish a little black pepper for that extra delicious flavour and taste, season cube, salt and mix properly....if too thick, add lukewarm water. You can use leaves but I use metallic cups..pour a good scoop into the cups, add shredded fish....steam in s pot oc already boiling water

    When the mixture is solid, that's after about 30-40mins, depending on the size of the cup...but if still soft after cooking, never mind, the corn pudding will form up after it cools..

    Remove from heat and serve with Agidi, steamed veggies or enjoy as a meal on it's own. 😘😋😋😋🥂🍾
