Ingredients

2 servings
  1. 8 ozlean pork
  2. 1garlic clove, smashed
  3. 1⁄2 green pepper, cut into bite-sized pieces
  4. 1⁄2 onion, cut into bite-sized pieces
  5. 2small tomatoes cut into wedges
  6. 8 ozcanned pineapple chunks, drained, reserving liquid
  7. As neededOil for deep frying and for stir-frying. I use Peanut Oil
  8. marinade
  9. 1beaten egg, use 1/2 for the marinade, discard the rest, or save, whatever
  10. 1 tbssoy sauce
  11. 1 tbsrice wine vinegar
  12. 21⁄2 tbs cornstarch
  13. Cornstarch for dredging the pork
  14. sauce
  15. 3 tbsrice wine vinegar
  16. 2 tbsbrown sugar
  17. 1 tsptomato paste. I use the type in a tube
  18. 1 tbsketchup
  19. 1 tspWorcestershire sauce
  20. 2 tspsoy sauce
  21. reserved pineapple juice
  22. 2 tspcornstarch

Cooking Instructions

30+minutes
  1. 1

    Cut pork into bite-sized pieces and add to the marinade. Let sit for at least 30 minutes. Heat deep fat oil to 380f. Dredge pork in cornstarch and put into oil for about 2 minutes, drain.

    Just before cooking the vegetables, refry the pork @410f until lightly browned

    Mix sauce ingredients

    Put some oil in a wok and stir fry garlic until brown; remove

  5. 5

    Add green pepper and onions and stir fry until tender-crisp

  6. 6

    Add sauce mixture and stir until thickened

  7. 7

    Add pork, tomato, pineapple, and heat. Serve over rice

Retired at age 55 and enjoying the mountains. I'm now 72, married for 50 years. :) I love to cook but I don't care if ingredients are Organic nor GMO, Gluten-free, low calorie, or low Cholesterol! And Never use low/no-Fat as I enjoy good food. I never take procedural pictures as most cooks know how to boil water and stir sauces.
