Ingredients

  1. Vegetable oil
  2. 1 poundfirm tofu
  3. 1large tomato
  4. 4-5scallions
  5. Salt and ground black pepper
  6. Soy sauce

Cooking Instructions

  1. 1

    Crumble tofu with your fingers.

  2. 2

    Dice tomato.

  3. 3

    Wash, trim and slice scallions. Separate greenish and whitish parts.

  4. 4

    In a large frying pan or wok heat oil. Add tomato and whitish scallions. Stir to coat everything with oil.

  5. 5

    Add a dash of salt and ground black pepper. Stir occasionally.

  6. 6

    When most liquid has evaporated, add tofu and rest of scallions. Stir and cook for 10 minutes.

  7. 7

    Serve with soy sauce.
