Ingredients

serves 4 servin
  1. 2 cupsurad dal
  2. 1 cupmoong dal
  3. 1 tspcrushed black pepper
  4. 1 tspgrated ginger
  5. 1 tspfinely chopped green chillies
  6. as per requirementOil for frying
  7. as per tasteSalt as per taste
  8. For sambar
  9. 2 cupscooked tur dal
  10. 2 cupschopped veggies (potato,brinjal,beans, pumpkin, tomato)
  11. 2onion sliced
  12. 1 tspFenugreek seeds
  13. 1 tsp mustard seeds
  14. 2 tbsp Red chilli powder
  15. 2 tbsp sambar masala
  16. 2 tbsptamarind paste
  17. 1 tsp turmeric powder
  18. 1 tspasefoetida
  19. 1 tspJaggery (optional)
  20. as requiredSalt as per taste

Cooking Instructions

    Soak urad dal and moong dal for 4 hours. Grind it to a fine paste.
    Traditionally only urad dal is to be used but moong dal makes it easy to digest. You can skip it.

    Add black pepper powder, green chillies, cumin seeds,grated ginger,salt.mix well and with hands whisk it till it becomes light.

    Heat oil in a deep pan. Once hot fry medu Vada till golden brown.
    Keep aside

    Now in a deep pan add oil, once hot add mustard seeds, Fenugreek seeds allow it to splutter. Add curry leaves. Add sliced onions. Saute well.

    Now one by one add all veggies.mix well.add turmeric powder, asefoetida, Red chilli powder,sambar masala.add water and allow it to cook for 15 minutes.

    Now add tamarind paste,jaggery. Add cooked tur dal.mix well. adjust consistency.
    Taste and add chilli powder and sambar masala if required.now on medium heat cook sambar for 25 minutes.

    Serve hot with medu Vada. I prefer only sambar. If you want you can make coconut chutney as well.
