Red Wine & Tomato Beef Stew

Ingredients

Prep 10 to 20 min Cook 2 to 3 hours
4 to 5 servings
  1. 1 lb (454 g)Lean beef stew meat
  2. 2Medium Onion
  3. 1 stalkCelery
  4. 1 cupGreen beans or Green peas -Frozen
  5. 1 can (284 ml)No salt added Sliced Mushrooms or 8 oz (240g) Fresh mushrooms
  6. 1 can (796 ml)No salt added Diced Tomatoes
  7. 1/2 cup(120-125 ml) Red wine
  8. 1 tbsp (15 ml)Worcestershire Sauce
  9. 1 tspGround black pepper
  10. 1 tspGarlic powder or Granulated garlic
  11. 1 tspItalian herb mix (dry)
  12. 3 tbspRolled (Old-fashioned) or Quick-cooking Oats
  13. This recipe is intended to be compatible with the diet of individuals with diabetes, kidney and heart disease, but please consult your doctor, renal nurse, nutritionist or other medical professionals!

Cooking Instructions

Prep 10 to 20 min Cook 2 to 3 hours

    In a medium bowl, Rub Ground black pepper, Garlic powder, Italian herb mix and Worcestershire Sauce into stew meat. Set-aside.

    Slice Onion and Celery, and measure Green beans. Set-aside.

  3. 3

    Drain and rinse canned mushrooms. Set-aside.

  4. 4

    Heat a large pot to Med-High temperature and add Olive oil.

  5. 5

    Fry stew meat from step 1 until surface turns white, then add vegetables from step 2 & 3, and cook until onion becomes slightly transparent.

    Combine Diced tomatoes, Red wine, and Oats.

  7. 7

    Cover with a lid. Reduce the heat to medium-low and simmer 2-3 hours and occasionally stir the stew.

    Option: Serve with hash brown or rice depending on your daily nutritional needs.
