Ingredients

  1. 5ripe plantains
  2. 5chicken breasts
  3. 1stem ofcelery
  4. Parsley
  5. 1leek
  6. 6 clovesgarlic
  7. Ginger
  8. 1medium sized onion
  9. 8tomatoes
  10. 2 teaspoonswhite pepper
  11. 3medium sized carrots
  12. 4bell peppers
  13. 1hand full of green beans
  14. Salt and cube for seasoning
  15. 3 cupsoil

Cooking Instructions

    Grind the garlic, onion (1/2), ginger, parsley and celery in a blender

  2. 2

    Take half of the above mixture and add to the chicken. Add to the chicken 1 teaspoon of white pepper, a cup of water, salt and cube and allow to cook for 15 mins.

    Peel the plantain and slice for frying but not too thin or too thick. Warm the oil and fry till golden brown.

    Cut the green beans, carrots and peppers into desired shapes.

    Roughly blend the tomatoes

    Drain the chicken and put in the oven for about 10 mins till golden brown.

    Reduce the oil used for frying the plantain. Add to it the rest of the onion and fry then add the tomato puree and fry until the water dries up.

    Add to it the rest of the blended green spices, 1/2 teaspoon of white pepper and the chicken stock afterwards.

    Put in the chicken and fried plantain and cook for 3 mins.

    Add green beans, carrots and peppers. Allow to simmer for about 5 mins.

    Serve it hot with red wine. Bonne appetite
