People line up on the roads to relish this delicious breakfast. It is sold only till 9am ,than the vendors wind up till next morning .

try . Here I have tried to recreate the same Maharashtrian street style snack .

Ingredients

20 minutes
2 serves
  1. 11/2 cupsbeaten rice (poha) (thick variety)
  2. 2 tbspoil
  3. 1potato, cut into cubes
  4. 1onion, finely chopped
  5. 1 tspmustard seeds
  6. 1/2 tspasafoetida
  7. 2green chillies, finely chopped
  8. 10-12curry leaves
  9. 1 tspgreen chilli - ginger paste
  10. 1 tbsplemon juice
  11. 1/2 tspsugar (optional)
  12. 1/2 cupaloo bhujia sev
  13. Aloo Bhujia Sev & chopped coriander for garnish
  14. Lemon slice to serve

Cooking Instructions

20 minutes
  1. 1

    Wash poha under running water. Drain &keep aside. Keep all the ingredients ready.

    Heat oil in a pan, add mustard seeds & allow it to splutter. Add curry leaves & asafoetida. Add green chilli - ginger paste & mix.

    Add potato cubes & saute for 1/2 a minute. Cook on medium flame covered with a thali with water in it.

    Once potatoes are 1/2 done, add onions & saute. Cover & cook till potatoes are tender. Do not brown the onions. Keep them translucent.

    Now add the washed poha & mix very well. Add chopped coriander.

  6. 6

    How to serve. : Just before serving warm the poha. Add aloo bhujia sev & mix.

    Serve immediately garnished with aloo bhujia sev, chopped coriander & lemon slice.

  8. 8

    Note: Add aloo bhujia sev only at the time of serving,so aloo bhujia sev doesn't become soft & it remains crunchy till the last bite.
