Crisp citrus roasted salmon

Wild salmon is a great source of omega 3 (I try to avoid farmed salmon for both environmental and nutritional reasons) and it is also so versatile - delicious grilled, roasted, fried, hot, cold ... even raw!! This is a super-easy way of cooking a delicious and healthy meal. Serve with a green salad or green beans.

Crisp citrus roasted salmon

Ingredients

  1. 2large fillets of salmón
  2. 1large lemon
  3. 1 tsp.dill
  4. 1knob of butter
  5. 1 tsp.grated ginger
  6. salt and pepper

    With a very sharp knife, carefully make a few deep cuts in the salmon fillets but without slicing completely. Pour the lemon juice over the fish and into the cuts, sprinkle the dill and ginger and a pinch of salt and rub vigorously. Cover and put in the fridge for an hour.

    Put the butter and a pinch of salt in the oven dish and put in the oven at 180º for a few minutes while the butter melts.

    Once melted, take the dish out. Put the salmon sliced-side down first, press gently on hot the melted butter and then turn over. The fillets will look like this --->

    Place in the oven and roast for 20 minutes. Then turn the oven off, put the top grill on high and grill for another 5 - 10 minutes until the top gets brown and crispy. Serve and enjoy!!

Born in the UK. Came to Spain on finishing Uni many many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day. I don't usually have much time my recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal because I prefer buying fresh local produce as much as possible. However sometimes, when I do have more time, I like to spend a few hours making more time-consuming recipes and filling my kitchen with delicious smells and great music.
