Tempura and Ginger Soy Sauce

Tempura is an extremely easy dish to make, little effort with amazing results. In this recipe I added a number of commonly used ingredients to deep fry. Choose your favourite meat, vegetables, seafood or fish to deep fry. Of course fresh produce will always taste better but you can use frozen as well. Ingredients

  1. Tempura batter
  2. 3/4 cupplain flour
  3. 1egg
  4. 1 cupice cold sparkling water
  5. 1/4 tspbicarbonate of soda
  6. Ground nut oil or Sunflower oil, for frying
  7. 1 pinchsea salt
  8. Dipping Sauce
  9. 12 tbsprice wine vinegar
  10. 2 tbsplight soy sauce
  11. 4 tbspsugar
  12. 2 tspgrated fresh ginger
  13. Vegetables
  14. cauliflower
  15. Aubergine
  16. broccoli
  17. courgettes
  18. mushrooms
  19. red pepper
  20. sweet potatoes
  21. zucchini
  22. snow peas
  23. lotus root
  24. carrots
  25. spring onions
  26. okra
  27. onion
  28. shiso leaves
  29. Seafood
  30. prawns
  31. lobster
  32. mussels
  33. oysters
  34. squid
  35. scallops
  36. crab
  37. Fish
  38. sea bass fillets
  39. haddock fillets
  40. cod
  41. coley
  42. plaice
  43. ray
  44. Meat
  45. Beef
  46. pork
  47. chicken

Cooking Instructions

    Mix the sauce ingredients all together in a bowl and set aside until needed.

    Beat the egg with the icy cold water until light and fluffy.

  3. 3

    Add the flour and bicarbonate of soda to the egg mixture. Mix quickly but do not over-beat.

    While preparing the vegetables and meat, store the batter in the fridge.

  5. 5

    You can use the tempura batter to coat most fish, seafood, meat or vegetables.

    Cut your selected vegetables, fish or meat into bite sized pieces, a little larger than pop corn.

    Make sure the pieces are dry before coating in batter. Coat pieces with a small amount of flour if needs be.

    When ready to cook heat the deep fat fryer, coat the pieces with the batter and carefully drop straight into the oil as you go along.

    Fry for 3-5 minutes. Once batter is golden brown remove from fryer and place cooked pieces on kitchen roll.

    Sprinkle with a pinch of salt as soon as removed from fryer.

    Serve with the dipping sauce.
