Ingredients

  1. 1 lbCalifornia Chorizo
  2. 1medium onion, diced
  3. 2jalapeños seeds and stems removed and diced
  4. 1carrot skin removed and diced
  5. 6medium Russet potatoes skinned and chopped
  6. 1green pepper chopped
  7. 1red pepper chopped
  8. 3 canchicken broth
  9. 1 tbspItalian Seasoning
  10. 1 tbspcilantro
  11. salt and pepper
  12. 8 ozcheese
  13. 8 ozhalf and half

Cooking Instructions

  1. 1

    Cook chorizo and onion. Add carrot and jalapeños until sautéed.

  2. 2

    Add potatoes and peppers. Cook until the potatoes are half done.

  3. 3

    Add chicken broth and herb. Cook on slow boil until the potatoes are soft.

  4. 4

    Use an emulsion blender to break down the constancy to what you like.

  5. 5

    Add cheese and reduce heat. Once cheese is incorporated and the pot cools off some add the dairy.
