Yam is considered by the IBO's as a wealth crop. This tuber crop adorns in pride during the annual new yam festival a prominent feature in the South - Eastern divide of Nigeria. Learning this very decadent meal was seeing my dad cook his home induced flavoured yam porridge at the weekends and when yam was made available. As someone from Imo state and one that has been across the divide I feel privileged to not only know how to prepare this very meal. But i have made it among my signature dishes and its one that holds so much meaning and love when shared.

Ingredients

  1. 1large tuber of white yam
  2. 1/2 cupred palm oil
  3. 4medium sized smoked dried Fish
  4. 2 cubeseasoning
  5. Garlic and ginger minced
  6. 1/2dry crayfish
  7. 1/2dried pepper
  8. 2 tbsppureed tomato
  9. 1onion chopped
  10. Chopped pepper
  11. Handfulshredded Wide bush curry or scent leaves

    Peel, cube and wash yam to make off starch. Soak Fish in minced garlic and ginger and allow to rest for five minutes.
    Add yam into pot, add all the dry ingredients. Add salt and check taste. Add your chopped onions, oil and some pureed tomato. Cover and allow to cook. When a bit pulp in touch. Add in your soaked Fish. Be careful dey dont break allow to cook some more. Take out the Fish and mash yam a little. The sprinkle in your chopped scent leave and turn. Turn off heat and allow to sit for f
