Ingredients

  1. 2medium size plantain (cut in desired shape)
  2. 200grams. Chicken gizzards
  3. 1small red onions (chopped)
  4. 4large red tomatoes (chopped)
  5. 1large sweet pepper (chopped)
  6. Scotch bonnet
  7. 3seasoning cubes
  8. 2 tablespoonveg.oil
  9. Scent leaf to taste

Cooking Instructions

    Boil gizzards in a pot with water and seasoning cube.set aside.

    Fry plantain also and set aside.

    Stir fry onions,tomatoes,bell pepper and scotch bonnet in 2 Tablespoons veg.oil for about 5mins.add seasonings and little salt to taste.Add plantain and gizzards in to the vegatable mix and stir to combine. Cover and leave it to simmer.Add chopped scent leaves,stir and take off the heat.
