The first and only recipe given to me by my momma. Great summer salad to use up tomatoes and cucumbers and tastes great on a hot summer day.

As Beyoncé Etta James once sang, At Last. At long last, I can use the word spatchcock.Spatchcocking the chicken cuts down on the cooking time, and offers linguistic joy! An old friend of mine used to make compilations of ska punk cover versions, called Spatchcock (vol.1, 2 etc.). I hope that this meal lives up to the genius that is I Fell Asleep on My Arm by the Aquabats.The chicken is simple but full of flavour. Using the pan juices to cook the cous cous adds all the colour and flavour you could hope for. The simplicity if these parts allows you to have some fun with corn on the cob, rather than just contenting yourself with slathering butter on it.I first had corn like this from Eat Drink Love Taco in St Kilda, Australia. On the off chance you’re near there, please get a steak and chorizo burrito and tell me how it was. If I could get it shipped 10000 miles to me, I would. Tex Mex heaven.

This cous cous is one of the things I make every Christmas Eve but it's still sensational any time of the year

Gorgeous dish, lovely and fresh, the lemon oil gives a subtle flavour that is to die for. Everyone always says it looks and tastes great. Easy to double for a BBQ or party and using corn based couscous makes it gluten-free

A taste of shrimp scampi. Healthy couscous and vegetables. This is my quick warm weather lunch or dinner. Great taste, little effort. I hope you will enjoy!

I am in love with this dish. The slight spice with rich tomato and citrus flavours makes this a beautiful tasting meal

A simple add in to cous cous. Meat can be substituted with lamb, poultry, beef, goat, or mushrooms.

These flavors my family can't deny. I do a lot of recipes with different flairs of these go to ingredients! So good!

Fry thinly sliced white onion in olive oil. Add your beef strips and cook till brown on medium heat. In the meantime prepare your peanut sauce. Combine your peanut butter with water, soy sauce, vinegar, sugar, pepper. Mix with hand blender. Add chopped chives at the end. Pour half of the sauce over the beef strips. Sauce will thicken up. Then pour over your other half of the sauce and switch the stove off. Add your cashew nuts and serve with cous cous.
